How To Buy Fresh Fishes At The Fish Market

By Alison Wilcox

It is certainly a good idea for the person to buy various sea foods at the Kailua Kona fish market. When he is shopping, he should aim to get those raw ingredients that are still fresh so that he does not have to fret about the quality of the dishes that he makes. Ingredients that are not fresh will only ruin the dish he is making.

If he wants to buy fresh ones, then he should first pay attention to those whole fishes. He will have to make certain that the said fishes he picks have clear, bright eyes. If the fishes are dull-eyed, they can still be cooked but they will not possess the same quality compared to when the said fishes were on their prime.

He should check up on the shine of the said fishes. If possible, the ones he should pick should be those who have a metallic and clean luster. If possible, there should be no dull colors on the skin of the fishes. The same goes with any discolorations. If he can find at least a few spots, then one should be sure that they are just marginal.

He should try smelling the fishes. Those fresh ones will have to smell like the clean waters. If not, then it must smell like touch briny and even like cucumbers. There must be no circumstances where he will have to buy those nasty smelling fishes. Even the best cooking style will not be able to improve it.

He has to check the gills of these fishes as well. The gills actually become a good part that he can check if he wishes to determine the freshness of these fishes. Those fishes that are still fresh should have a rich red color. Those which are not fresh anymore will have a faded brick color.

Another thing that one will have to consider is whether there are live animals within that place. He should then observe how these live ingredients are acting while they are in the tank. They should be properly scampering and swimming around, happily at that. This applies not only to fishes but to lobsters and crabs as well.

Be sure to determine if the shellfishes are still fresh. It is best for him to make sure that those scallops, oysters, mussels, and clams are still alive and fresh so that he can get the best flavor out of the dish that he will cook. The shell will protect the inside so all the nutrients will also be trapped in there.

Put importance on shrimps as well. The person should prefer to buy those shrimps that are whole and frozen. This is actually the best choice for him since buying them whole and frozen allows him to keep its freshness and prevent the ingredient from rotting away easily.

Squid and octopus should be taken care of properly too. There are lots of these being sold at a Kailua Kona fish market. Like the shrimps, make sure to buy them frozen. With this, the person must be able to keep the rich flavor of the ingredient when cooking. He does not have to worry about the freshness of the product if it is frozen as well.
