Actually, this is to be considered as the starting point and the most crucial of all the phases involved in the process. There are lots of things he should guarantee for this stage.

The transportation vehicle used for the transport should have appropriate equipment if he does not wish to ruin his produce. This should be considered properly.

He should also pay attention to how the slaughtering process of the chickens is done. Before it comes to the point where the chickens have to be slaughtered, then are first stunned. They will then be hanged in a way that their wings and any other body parts are not damaged. These tasks will have to be done swiftly.

Once the person has done the stunning and the hanging tasks, the person will have to do the pre-wash method. For the stunning, it is a requirement that the place has to be dry so as not to cause damages and injuries. However, the pre-wash stage will need lots of water to wash away those fecal matters made obvious after slaughtering the chickens.

After he has washed the chickens appropriately, the person will then have to proceed with the scalding. Scalding is the method where the body of the chickens are exposed to extreme heat enough to raise the temperature of the body but not cook it. This is so that the feathers can be loosened up properly and the body dilated.

Speaking of the plucking, there are some factors that he should ensure for this stage. It is highly required for the person to ensure that the temperature on the body is quite high. The high temperature will ensure that the follicles are loosened up. This instantly makes it easier for the person to pluck the said feathers without any damages.

Evisceration is evident for this as well. With evisceration, he should make sure that each of the body parts of the said produce, regardless of whether it is internal organs or not, are properly separated from each other on the basis of human consumption. They should then be chilled to avoid having molds grow on them.

Chilling should be done by keeping the water at zero degrees Celsius. One should ensure this one if he wants to prepare the body of the chickens for the next phase. If an increase in the temperature is necessary, it is a requirement to control this if he does not want to ruin the body parts he has just chilled.

It is then important for the individual to check whether the packaging of the produce is appropriate or not. This is one of the factors that consumers will look for when it comes to the quality chicken processing, after all. This will determine whether he can sell his goods in the market or not.
