However, cuts of the same meat should smell alike. By comparing cuts of the same type of meat, you can determine if something is bad. If you ask, the butcher will most likely let you smell a sample of the food before paying for it.

There's meat that you can buy that already has the bone taken out of it. However, the bone is an excellent source of heat conduction. It makes the food cook quicker and taste better. However, depending on what you're cooking you might want to buy cuts that already have the bone taken out. Certain meals demand that the bone already be removed.

If you ask the butcher, you should be able to buy special cuts of meat. You should always be able to buy packaged meat but special cuts should be available. Special cuts are always fresher and are guaranteed to give you what you want.
